Can my mother-in-law rightfully take away my H's car if he's the one paying for insurance & maintenance?

You make it sound like he's going "above and beyond" his duties by insuring and maintaining this vehicle... That's the LEAST he can do . If you want to solve the problem: 1) give the car back 2) buy it from her 3) buy a different car .
